Ingredients

1 cup(s) , chopped cucumber(s)

1 cup(s) , halved grape tomatoes

1/2 cup(s) , cooled cooked quinoa

2 medium , chopped uncooked scallion(s)

2 tsp extra virgin olive oil

1 tsp fresh lemon juice

1/4 tsp kosher salt

1/4 tsp black pepper

1 cup(s) fresh baby spinach

5 oz , cooked and sliced, about 2 links vegan sausage

Directions

In medium bowl, toss cucumber, tomatoes, quinoa, scallions, oil, lemon juice, salt, and black pepper.

Divide spinach, quinoa mixture, and sausage between 2 bowls or storage containers. Cover and refrigerate.
